This salt of life is made using the traditional flat kiln method on Yonaguni Island, Okinawa, and is slowly simmered for 10 days, containing just the right amount of bittern, giving it a sweet and delicate flavor.

Uses Tosa Bincho charcoal ginger.I was drowned in the charcoal of Mr. Sugimoto, a master of charcoal from Kochi and Muroto.
